I have a creature out and play an enchantment on it. In response my opponent torches the creature and kills it with an instant spell. Basically he torches the creature before I play the enchantment.

does my enchantment go to the graveyard or back to my hand?

even rancor goes to graveyard. When it resolves theres no valid target and never comes into play.

Note that they can't kill the creature before you play the enchantment. They kill it before it resolves. But as soon as you paid the cost, put it on the stack, chose the targets, etc., it was played.

I'm also assuming you're talking about an Aura here. Other Enchantments don't target something on the stack.

The only target of the Aura is illegal. Therefor it is countered when it tries to resolve and goes to the graveyard. You don't get it back and you don't get to change targets.

Well the enchantment dies, but the good news is that if it cost you 2 manas and you tapped a vesuvan shapeshifter coppying a gemhide sliver to pay those 2 manas, you can tap the untapped gemhide sliver in response for 2 manas, even if either it, or the shapeshifter, was the one targetted by the instanst spell. Only if the instant spell has not resolved yet, though.
