If I pull off an infinite loop of creatures coming into play and saccing themselves (project x type things)...does that up the gravestorm account on bitter ordeal?

Gravestrom says for each permanent...but does it recount the looping creature per sac or is it still one permanent?

Permanents are new whenever they change zones. It ups your gravestorm count.

It doesn't pay attention to the names of the sacrificed permanents, even if the same permanent is sacrificed over and over to a repeatable effect, it will add a tally to the Gravestorm. Think Enduring Renewal and Wild Cantor Very Happy .
