Using before tapping

I have a tapped Door to nothingness in play and my opponent has a icy manipulator in play. On my untap step I untap my door. Can my opponent tap my door before i can use it assuming I have the mana to use it?

no, on two different counts.

First of all, since it is your turn, you receive priority first. You can play the ability of Door to Nothingness before your opponent could do literally anything.

Second, assuming that you do pass your opponent priority and he activates Icy Manipulator targeting your Door to Nothingness, you could respond by playing its ability.
