My question is about using Mirror Entity's ability with cards like Doubtless One, Soulles One, Nightmare... So if I have 10 clerics including Doubtless One and Mirror Entity, and I pay 4 mana, doe's Doubtless One become 4/4 or stays 10/10?

It becomes what Mirror Entity tells it to. The ability of Doubtless One is Characteristic Defining Ability, and they are always applied first.
