Sacking a creature + Blink

IF you have a creature "Pay (1), sacrifice: ability" you can't blink it in response, correct?

Correct. If it's on the left side of the ":" it's part of the cost, meaning you do it before the ability goes on the stack.

Costs are paid as it is put on the stack, not after. Responding something happens after it is put on the stack.

So you can't target anything that has been sacrificed.
