Gone forever, or with the right modifications can it stay alive?

Sure, reanimate and exhume are gone, but Stitch Together and Life/Death fill their gaps nicely. Nomads left, but Shuko and Grafted Wargear both work in its stead.

Does anyone think that the breakfast bar will be open, or in great need of foreclosure?

It's dead. Beyond what you said there are 2 huge reasons:
1) no more aether vial. this card was huge, saving mana, allowing you to play a myriad of different colored creatures, circumventing countermagic, etc
2) inconsistency. Shuko and Wargear may look like replacements, but they can't be fetched with Eladamri's Call or Living Wish, and Enlightened Tutor is no longer legal.

Good point, I had forgotten all about Aether Vial being nixed. Yeah, I guess that does kinda screw with the deck barring some major input from Coldsnap and/or Time Spiral.

Come to think of it, all the tutors are basically dead. Well, all the played ones, I guess you could say demonic is still legal but 2bb to tutor is a bit much.
